Cabernet/Syrah, Domaine Cavalier 2021

The vineyards of Château de Lascaux, deep within the dense oak and pine forests of the Val de Montferrand, have been in the same family for 15 generations but Jean-Benoit Cavalier only established the domaine (now certified biodynamic) in 1984. The estate is best known for its imposing Pic St Loup wines but also makes this characterful blend of Cabernet Sauvignon and Syrah with a little Merlot: unoaked and full of fresh cassis and plum fruit, very supple and rounded with a slightly savoury, herbal finish.
